Ryusen Cutlery
Asymmetry is a steak knife designed for Fukui-based forged-cutlery manufacturer Ryusen Hamono. This product was developed in response to a direct request from Chef Noriyuki Hamada, the Japanese representative of the Bocuse d’Or International Culinary Competition held in France in January 2013 when he was looking for a knife to use during the competition. The forging process, in which Ryusen Hamono specializes in layering hard and soft materials, has resulted in a beautifully sharp blade pattern with a ‘Ryusen ring’. The knife shape was derived from cutlery etiquette, which states that a chef’s knife should never be held in the left hand. The asymmetrical knife with an integrated blade and handle is uncomfortable in the left hand. While in the right hand, the index finger rests on the eccentric blade, which is held more naturally by the other fingers. The knife was completed after three years of development. Chef Hamada was the first Japanese to win third place in the competition. In addition to the food, many judges were fascinated by the sharpness and beauty of ‘Asymmetry’ and took the knives home with them. From this anecdote, the existence of Ryusen Hamono knives became known throughout the world.
